Tomato Sauce

It has been a while since this blog has seen some TLC.. Waddaya say we start this thing back up? I hope everyone had a great NYE!

I'd like to share a recipe for a homemade tomato sauce that I just LOVE. Keep in mind that I am just a party of one, so this will need to be adjusted depending on how many you're cooking for. This is a very basic sauce and can use some jazzing up, but it's perfect for a beginner like me :)
Ingredients:
Olive oil
2 tomatos
2 cloves of garlic
Fresh basil (can use dried, but fresh is much yummier)
Fresh oregano (Same, can use dried)
Tomato paste ( I usually use about a tablespoon)
Salt and pepper to taste

Directions:
It a large pan, add EVOO and crushed garlic and let cook, but being careful not to burn garlic. Using a cheese grater, grate the tomatoes over a bowl and throw away the remaining skin. Add the grated tomatoes to the pan. Add the basil, oregano, and salt and pepper to taste in the pan and let simmer for about 15-20 minutes. At this time, I usually start the pasta. Stir the sauce occasionally. If the sauce appears too thin then you can add some tomato paste. I change up the recipe every time I make it, last time I added mushrooms which was yummy, and I've also used zucchini.
